Nanny's Marinated Flu-Season Salad


Use this crunchy garden salad as a deliciously marinated side dish



Adding a little touch of garlic to the dressing  can be helpful.  Garlic contains compounds, such as allicin—an oily substance, which gives it the characteristic odor and provide its antioxidant properties which fights the common cold. 



Prep Time:  20 min   Total Time: 1 hr. 20 min   Servings: 8 (2/3 cup) servings

Ingredients:


1 cup spinach leaves
1 cups  yellow squash
1 cup red bell peppers
1 cup  hot peppers (optional)
¾  cup Apple Cider Vinegar for dressing and 2 garlic cloves crushed


Directions:

Bring 8 cups water to a boil in large saucepan. Add broccoli and cauliflower; return to a boil. Boil 2 minutes. Drain; rinse with cold water to cool. Separate broccoli and cauliflower.

In large glass bowl, layer cauliflower, cherry tomatoes and carrots. Pour dressing evenly over all. Top with broccoli. Cover; refrigerate at least 1 hour to marinate before serving.
