Ingredients:
1 oz. Seasoned Bread Crumbs
1 oz. Panko Bread Crumbs
Ranch, honey mustard or barbecue sauce for dipping, optional
Directions:
Preheat oven to 425F
Cut chicken into bite sized pieces.
Break eggs into bowl, mix thoroughly.
Add bread crumbs and panko to a different bowl, mix thoroughly.
Dip chicken into egg, covering all parts with egg.
Roll in bread crumb mix.
Place on cookie sheet.
When all chicken is coated, place in oven for 20 minutes.
These crisp up very well, for even crispier nuggets, you can grind your panko and bread crumbs a little, and broil them on high for about 1 minute per side. I really enjoy being able to have crispy "fried chicken" without all the fat.
I didn't list spices as everyone likes their own style for this kind of thing. You can try this with any combination of spice you like.
