San Francisco Pitas




"An easy tossed salad--with shredded cheese, avocado, sprouts and more--makes a delicious filling for a pita pocket sandwich!"

Prep Time: 12 min.  Ready In: 12 Min.  Servings: 4

Ingredients:

1 avacado, diced
1 cup sprouts (sunflower, pea shoots, adzuki beans or lentil sprouts)
2 tablespoons chopped fresh basil or parsley
½ cup salted, roasted soy nuts (optional)
4 (6 inch) whole wheat pitas

Directions:

1.       Combine salad greens, cheese, tomatoes, avocado, sprouts, basil and soy nuts, if desired, in large bowl. Add dressing; toss well.
2.       Cut pitas in half; open into pockets and fill with mixture.
