Apple Potato Salad


Prep Time:  10 min   Total Time: 30 min  Servings: 2

Ingredients:



4 potatoes, washed and cut into ½ inch pieces
1 medium red onion, thinly sliced
2 cloves garlic
1 1-inch piece of ginger
slivered almonds
¼ cup lemon juice
2 tbsp. chopped parsley
1 tbsp. chopped chives
salt and pepper to taste

Directions:

Heat the oil in a large pan over medium heat. Add the potatoes and cook until softened, about 10 minutes, then add half the onion, garlic, ginger, and almonds. Cook until the onion is translucent, 3 to 5 minutes. Add half the apples and butter and cook until softened, another 3 minutes.
Put the mixture into a medium sized serving bowl.
In a separate bowl mix mayonnaise and sour cream together, add remaining apple, remaining onion, lemon juice and the Parmesan cheese.  Toss well. Season with salt and pepper.
Serve on top of warm potato mixture. Garnish with the parsley and chives
