Zucchini Potato Pancakes



Ingredients:

1 cup unpeeled zucchini, grated

3 eggs
¼ tsp. salt
pepper
sour cream (optional)
Salsa (optional)


Directions:

Stir vegetables into mixture of beaten eggs, salt, and pepper.  Lightly oil a pan or skillet.  Use ¼ cup of batter for each pancake.  Fry until brown for about 5 minutes on each side.  Makes 8-10 pancakes.

Top off with a dollop of sour cream and salsa if desired.
