Patriotic Buttermilk Waffles


Ingredients:

3 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 c. buttermilk
1 cup fresh blueberries
2 cups fresh strawberries
Whipped cream

Directions:

Heat waffle iron. Stir buttermilk and egg yolks together. Sift together dry ingredients. Beat egg whites until stiff.  Combine buttermilk mixture and dry ingredients. If using electric mixer, do not over-mix. Stir in slightly cooled butter. Gently fold in the egg whites, making sure to leave some showing. Pour batter into the center of the waffle iron and let is spread until about 1" from the edge. Quickly close the lid and do not open during baking. Bake until steaming stops or signal light shows waffle is done.
Garnish the finished waffles with whipped cream, blueberries and strawberries for a festive, patriotic breakfast.
