Ingredients:
1 lb extra lean ground beef or sliced steak
1 tbsp. olive oil
2 cloves garlic, crushed
3/4 cup Water
1/4 cup Chopped green or red pepper
1 teaspoon Dried oregano
1 teaspoon chili powder
1 small Eggplant, cut into 1/2" slices
1/2 teaspoon Salt
1/8 teaspoon Pepper
Directions:
In a large skillet, brown beef with the onions, oil and garlic. Add tomato sauce, water, green or red pepper, oregano and chili powder.
Salt and pepper the sliced eggplant. Place on meat mixture; cover & simmer for 15 minutes, or until eggplant is tender. Serve with Parmesan sprinkled over the top
