Ingredients:
1 cup spinach leaves
1 cup strawberries
1 cup orange or mandarin orange slices
1 cup blueberries
1 cup pomegranate seeds
1 cup Sunflower Seeds (optional)
¼ cup honey and ¼ cup Apple cider vinegar with 1 clove crushed garlic for dressing.
Optional Dressing:
¼ cup pineapple juice
1 cup vanilla yogurt
¼ teaspoon ground ginger
½ teaspoon Dijon Mustard
1 tablespoon Honey
Directions:
Put spinach leaves into a bowl. Add strawberries, oranges, blueberries, pomegranate seeds and sunflower seeds if you wish.
In a seperate bowl prepare your dressing. For the Apple Cider vinegar dressing, mix 1/4 cup vinegar, 1/4 cup honey and crushed garlic together. Then pour over salad.
For the yogurt dressing, mix pineapple juice, yogurt, ground ginger, mustard and honey together in a bowl. Then pour over salad.
