Lemon Olive Chicken


This dish, served over rice, is family-friendly and company-ready in no time.
Prep Time:  10 mins.  Total Time:  30 mins.  Servings:  4

Ingredients:

1 tbsp. vegetable oil
4 skinless, boneless chicken breasts
1 can Cream of Chicken Soup
¼ cup milk
½ tsp. lemon juice
1/9 tsp. pepper
½ cup olives
4 lemon slices
1 cup white rice
Asparagus serve on the side (optional)

Directions:

Heat up the oil in a large pan over medium-heat.  Add chicken and cook for 10 min.
Stir in the soup, milk, lemon juice, pepper and olives and heat to a boil.  Top the chicken with lemon slices. Then reduce the heat to low.  Simmer for 5 mins.
Serve chicken and sauce over rice when ready.
