Nanny's On-the-Fly Stir-Fry


A simple stir-fry can pack a meal’s-worth of nutrition onto a single plate.  Dinner is on the table with a fast flip of the wrist.

Prep Time: 0 mins.  Total Time:  25 mins.  Servings: 4

Ingredients:

8 oz. skinless boneless chicken breast
2 medium carrots
1 ½ broccoli florets
2 cloves garlic, minced
¼ cup green onion
2 tbsp chopped peanuts
1 cup frozen peas
1 tbsp. ginger
1 tbsp. soy sauce
1 tsp. oil
¼ to ½ tsp. crushed red pepper
¼ cup water
rice

Directions:

Spray a large pan with nonstick spray coating.  Add the chicken, carrots, broccoli, and garlic and cook for 3 to 4 mins. 

Then add the green onions, peanuts, ginger, soy sauce, oil, and red pepper and cook for 2 mins. 

Stir in the water and let it heat through. 
Serve over cooked rice
