Penne with Chicken, Asparagus and Lemon Alfredo Sauce



Quick and easy, great for kids and budget friendly

Prep Time: 10 mins.   Total Time: 25 mins.

Ingredients:

1 lb. bag Penne pasta
1 lb. asparagus
12 oz. chicken tenders
½ tsp. salt
½ cup flour
1 ½ tbsp. olive oil
2 tbsp. lemon juice
¼ cup Parmesan cheese
1 tomato
1 clove garlic, minced
¼ cup chives
pepper

Alfredo Sauce

Directions:

Cook the pasta in a large pot. Add the asparagus 3 min. before the pasta is done.

Sprinkle chicken with salt, then lightly coat with flour.

Heat the oil in a large pan over high heat. Add chicken; sauté for 3 mins. until golden brown. Add the Alfredo sauce, lemon juice, garlic and cheese.  Bring to a simmer and cook 1 to 2 mins. until chicken is done.

Drain pasta and asparagus; put back in the pot.  Then add sauce, tomato, chives and pepper.  Mix together and serve.
