Orange Salmon and Rice



The wild rice mix cooks in the oven alongside the salmon that’s been lightly brushed with a marmalade and soy sauce mixture.  Mmm tasty. And heart healthy too.

Prep Time:  15 min.  Total Time:  1 hr. 5 min.  Servings:  4

Ingredients:

1 package wild rice mix
¼ cup chopped pecans

1 ½ cups water

2 tbsp. orange marmalade
2 tsp. soy sauce
¼ tsp. ground ginger
¼ cup chopped parsley


Directions:

Heat  the oven to 400°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray. In baking dish, mix rice, seasoning packet from rice mix, pecans and water.

Remove skin from salmon with sharp knife. Cut salmon into 4 serving-size pieces. Put salmon on rice mixture. In small bowl, mix marmalade, soy sauce and ginger; lightly brush over salmon. Then cover baking dish with foil.

Bake 40 to 50 minutes or until salmon flakes easily with fork and rice is tender. Sprinkle with parsley.

 This tasty recipe is an excellent source of omega-3 fatty acids, nutrients and  may reduce the risk of heart disease.
