Irish Soda Bread with Raisins



A very easy, very good tasting bread.  Best if made the day before, or several hours before serving.

Prep Time:  15 min  Cook Time:  1 hr. 10 min  Servings: 12

Ingredients:

3 cups flour

1 tbsp. baking powder
1 tsp. baking soda
1 egg, lightly beaten
2 cups buttermilk
Raisins, as many as desired


Directions:

Preheat oven to 325 degrees. Grease a 9x5 inch loaf pan.

Mix flour, baking powder, sugar, salt and baking soda together in a bowl.  Then Blend egg and buttermilk together. Mix until moistened. Then add raisins and stir in butter. Pour into pan.

Bake for 65 to 70 minutes.  Cool on a wire rack.  Wrap in foil for several hours for best flavor.
