Pumpkin Spice Breakfast Cakes




Prep Time: 15 Min   Cook Time:  35 min  Servings:  4

Ingredients:

For the cakes:


½ cup sugar
2 eggs
2 tsp. Vanilla
2/3 cups pumpkin filling
2/3 cups flour
2 tsp. baking powder
¼ tsp. salt
½ tsp. Pumpkin Spice
½ tsp. Cinnamon
Chocolate Chips (optional)


For the Maple Glaze:

1 tbsp. Maple Syrup

2 drops water
1-1/2 cups powdered sugar


Directions:

Preheat oven to 350F.

Mix butter and sugar together until light and fluffy. Add egg and mix until well combined. Add in vanilla and pumpkin and chocolate chips. Mix dry ingredients together in a separate bowl and add to pumpkin batter.

Spray 4 (individual serving sized) ramekins with non-stick spray and pour batter into them. Bake for 30-35 minutes or until inserted toothpick comes out clean.

For the glaze:


Mix syrup, water and sugar together to form a glaze. Depending on desired consistency, add more or less liquid. Drizzle over cooled cakes.
