Lemon-Raspberry Mousse Squares



Prep Time:  15 min  Servings:  12
Ingredients:
Vanilla Wafers

¾ cup boiling water
1 pkg.  (3 oz.) Lemon flavor Gelatin
½ cup ice cubes
1 pkg. cream cheese, softened
¼ cup sugar
2 tsp. lemon zest
1 tub cool whip topping, thawed
1/3 cup raspberry preserves
1-1/2 cup fresh fruit

Directions:
Place 16 wafers around the edge of a plastic wrap-lined 8-inch square pan.  Add boiling water to gelatin mix; stir for 2 min. then stir in ice until it melts.
Beat in the next 3 ingredients in a large bowl until blended. Slowly beat in gelatin, and whisk in 2 cups of cool whip.
Pour half the gelatin mixture into the prepared pan; cover with 16 wafers.  Microwave preserves on high for 15 sec. brush onto wafers. Top with remaining gelatin mixture and wafers.
Refrigerate for 4 hours. Serve on plates and top with remaining cool whip and fruit.
